How Hot Is Hot?

Most recipes will call for a hot, medium, or low fire. If you don’t have a thermometer, here’s an easy way to test your temperature. Be careful!

Hold your hand, palm side down, over the grill. Count (using “one thousand one, one thousand two” and so on), until the heat is uncomfortable. If you can keep your hand in place for:

  • 2 seconds—the fire is hot (375-plus degrees)
  • 3 seconds---the fire is medium-hot (350-375 degrees)
  • 4 seconds---the fire is medium (300-350 degrees)
  • 5---the fire is low (200-300 degrees)
